You don't need those fancy "quick-release" attachments. The Roose Motorsport coolant hose kits just supply you with a normal silicone hose and a hose clamp.
I have installed them in my car and they work just fine.
I need the 2 heater hoses that go into the firewall. My car is currently at my mechanic who has contacted Holden and apparently they're not available anywhere in the country. They have a special attachments that are molded to the hoses, which go into the firewall. Would anyone know the part numbers for these and where I could source them?

As above. The quick release isnt needed. I also have roose hoses and its a simple silicon hose and clamp like every other hose

Basically, there are 2 stubs that are fixed to the firewall in the engine bay, these are what the factory quick-connect fittings clip onto. However, they have enough length and a rolled lip on the end that allows you to just slip a normal rubber or silicone hose over the end and fix a clamp, just like any of the other coolant hoses. I don't have any pictures on hand at work, but I can try get you something when I am at home.
Here's a picture from google, once you slip those quick-release fittings off. The silver stubs are sufficient to attach the new pipes onto.
When I did my car I ordered the full coolant pipe kit from Roose Motorsport and did everything in the engine bay. I am not sure if they sell the pipes individually, but you might be able to email them and ask.
